Cafe Shin Palais Royal
Café Shin was born from the meeting between two worlds: that of Julien Sebbag, creative and visionary chef, and pastry chef Eun Jung Shin Akrich, whose culinary sensibility is inspired by her Korean roots. Their ambition: to create a second place of beauty and sweetness, in the heart of the Palais Royal, where one comes as much for the visual experience as for the gustatory discovery.
Our role was to support this project from its foundation. The construction began with a complete deconstruction and a technical upgrade, to then shape a decor that reflects the spirit of the place: minimalist, poetic and refined.
We coordinated each step, from the meticulous laying of terracotta floors to the installation of a polished concrete bar combined with textured glazing, not to mention the creation of a wood-stained ceiling that structures and softens the volumes, not forgetting the play of light, designed to enhance the architectural lines and accompany the different moments of the day.
Throughout the construction, we worked hand in hand with the founders so that every detail, from the choice of materials to the layout of the spaces, is faithful to their vision.
Today, Cafe Shin Palais Royal opens its doors: a place to taste specialty coffees and unique lattes of Korean inspiration, delicate homemade pastries, as well as salted kimbap offered exclusively at lunchtime.
A project that is close to our hearts because it illustrates the meeting between a dream of chefs and demanding fieldwork, transforming a raw space into an iconic and inspiring café.
