Cafe Shin Petites Ecuries is the starting point of an adventure born from the complicity between two chefs: Julien Sebbag, instinctive and creative chef, and Eun Jung Shin Akrich, pastry chef whose sensitivity is rooted in Korean culture. Together, they imagine a simple, sincere and bright place, where the kitchen tells a story both intimate and universal.

Our role was to support the transformation of this former space in the 10th arrondissement into a warm, identity-affirming space.

The construction site began with a complete stripping, revealing the raw volumes and texture of the materials. We then orchestrated each step: installation of a smoothed concrete floor, creation of a custom central counter, integration of fine woodwork and soft lighting that highlight the material and gestures.

The goal: to create a place on a human scale, both raw and delicate, where light, color and textures interact naturally.
Every detail, from the wooden seats to the translucent glazing, has been designed to serve the vision of the founders: that of a café at the crossroads of cultures, rooted in reality but imbued with poetry.

Café Shin – Petites Écuries is above all a story of encounters: between France and Korea, between cuisine and craftsmanship, between the energy of the neighborhood and the sweetness of home.
A first chapter that laid the foundations of a universe that has since become a true signature.
